Oval fish pan

Oval fish pan
£46.50
Ex Tax: £38.75
A  traditional french professional style fish pan, 36 x 26.5cm, of the type often used in professional kitchens — perfect for sealing, browning and grilling at high temperatures, on all heat sources, including induction. Properly seasoned and prepared, these pans will out-perform any non-stick or stainless pan, and will last more than a lifetime. During seasoning, the steel of the pan bonds to polymerised oil, forming a deep brown to black surface that acts as a natural non-stick coating, which doesn't peel if over heated, self repairs if scratched (say by metal tools), will not release novel chemicals into your food, or for that matter poison birds. Made in Val-d'Ajol, France by de Buyer, who have been making similar pans in that region since 1830. With triple riveted gunmetal enamelled steel (heat proof) handles. Not for the dishwasher.

Care Advice

Hand wash with a stiff vegetable fibre brush, using either no soap or a very gentle soap such as Marseille White Soap. Avoid soaking. Dry immediately after washing, and either return to the hob to ensure the pan is fully dry, or dry well. Season with oil before first use, and re-season when necessary. Store in a dry environment to prevent the formation of rust. Should rust occur, use an abrasive or rust-remover to remove, and re-season.
