Pallarès Solsona

Pallarès Solsona, Knife Makers
Catalonia, Spain
Pallarès Solsona makes exceptional artisanal knives and tools by combining centuries-old Catalan blade-making traditions with meticulous hand-craftsmanship and high-quality materials. Founded in 1917 in the Spanish city of Solsona by two brothers Lluís and Carles Pallarès, they originally specialised in producing razors, both having been skilled blacksmiths themselves. Their business also directly connected to the history of the city and the wider region of Solsonès as being an epicentre for high-quality blacksmithing and knife production at that time.
As technology advanced in crafting techniques and types of steel, so did the variety of knifes they made. Products range from knives, shears, scissors, and other tools for kitchen, household, and garden use, as well as more industrial farming tools. These are made from quality materials that range from carbon and stainless steels, a variety of wood types, natural horn, and resin.
Pallares knives are known for their exceptional sharpness — blades are ground extremely thin and sharpened completely by hand, giving them an extraordinarily sharp, reliable edge right out of the workshop. Their carbon and stainless steel blades feature a superior temper that makes them tough, resilient, and easy to re-sharpen. Handles are shaped from sustainably harvested local woods like boxwood, beech, and olivewood, ensuring every piece has a unique, organic feel. Designed originally for farmers, shepherds, and tradesmen, the knives prioritise honest functionality, ergonomic comfort, and long-lasting everyday utility.
Craftsmen shape the blades using traditional hot-forging techniques with high-grade carbon steel or pure alloy stainless steel. Master artisans hand-hone and sharpen every single blade rather than relying on automated factory grinding. Wooden handles are lathed and finished by hand, then fitted securely to the tangs using traditional pinning and riveting methods. Now run by the third generation, the workshop preserves specialised local knowledge passed down through a century of family operation.

Further Information

Carbon vs Stainless

Many cooks and knife enthusiasts prefer carbon steel knives over stainless steel because of their superior cutting performance and how they evolve over time. Carbon steel has a uniform, fine-grained structure. This allows the blade to be sharpened to a much finer, razor-sharp edge than most stainless steels. Despite being hard, carbon steel is surprisingly easy to sharpen. It responds quickly to whetstones, meaning you can restore a dull edge with less effort. High-carbon knives hold their razor-sharp edge for a long time. They can withstand heavy use before needing to be sharpened again. Unlike stainless steel, which stays shiny, carbon steel reacts to the environment. Over time, exposure to air and acidic foods (like onions or citrus) creates a dark, mottled surface layer or patina. They can rust however, and need more care and maintenance than a stainless steel blade. Ultimately, people choose carbon steel when they prioritise maximum cutting precision and don't mind the ritual of immediate cleaning and oiling.

Caring for Carbon Steel

Carbon steel holds a finer edge and sharpens more effectively than stainless, but can rust if neglected. As with any high-quality knife, these knives should not be put through a dishwasher — especially if they have wooden handles.
