A very fine grater made of calciferous samegawa (shark-skin) bonded to a hinoki (Japanese cypress) support. Traditionally considered the best method for the production of wasabi pastes, and the only one to ensure the proper velvety smooth texture. Used with a circular motion these are also good for use with ginger, garlic, western horseradish, or for the fine pulping of other hard crisp vegetables and fruits be that for condiments, sauces, or baby foods. The pulp is best collected by use of a small brush. Approximately 13cm by 8.5cm.
