An olive wood-handled French pattern carbon steel chefs knife with 6 inch blade. Carbon steel is renowned for its ease of sharpening, keenness of edge, and better edge retention than similar stainless steel knives. It will discolour in use, turn almost black as it develops a protective patina, but should never be left wet, as it may if neglected rust.
