Japanese asparagus knife
A hand made carbon steel serrated hooked knife with a long poplar wood handle from Asano Mokkousho of Tsubame-Sanjo, Niigata Prefecture, central Japan. Used for harvesting asparagus the sharp, fine, but relatively aggressive serrations make short work of the hopefully not too fibrous stems of asparagus whilst the long handle and short, curved, tapering blade allows one to reach through a bed and select only those stems that might be ready. Being carbon steel these can rust if left wet or stored damp, and are best lightly oiled if left for extended periods. With a handle of about 33cm and blade of 12cm.
