A 28cm blue steel, traditional French 'Country' style deep sauté pan, suited to any heat source, including induction. Perfect for searing, grilling and browning, the deeper sides of this pan mean it is also great for tossing and stirring larger quantities of meat or vegetables. Properly prepared, this will increasingly outperform any non stick pan, will last a life time, and actually improve with age. It won't peel above medium heat or release plastics into your food, and will self repair if scratched. Once seasoned, this pan should turn an even black colour, as the steel bonds with layers of oil and carbon, forming what amounts to a natural non stick coating. Not dishwasher safe.
