Pallarès stainless steel sharpening steel
A high-quality stainless steel sharpening steel, produced in Europe for Cuchillería Pallarès, the one surviving knife and tool maker in a town once dotted with small manufacturers, who finish the tool with its beech wood handle. Great for honing all kinds of kitchen knives to a true edge. The easiest way to use a sharpening steel is to hold it vertically against a board and then, holding your knife with the sharp edge pointing downwards, run your blade down one side several times at about 22 degrees to the steel, then repeat on the other side (there are lots of how-to videos out there for guidance).
