Kiridashi craftsman's knives
Simple hand forged knives with traditional silk bound handles and a triple layered san-mai construction, meaning a hard 'blue paper' steel core is embedded between softer, ductile layers. This allows for an exceptionally fine and durable edge whilst avoiding the pitfalls usually associated with such hard yet brittle high carbon steels - their tendency to shatter or snap under tensile stress. Double bevelled these are the quintessential Japanese craft knife, used for cutting out, carving wood, sharpening pencils, trimming, and shaping - roughly equivalent to our Stanley knife. Straight (purple) or curved (yellow) blades, both knives are about 16cm in total length.
