Traditionally used for breaking down carcasses, as well as cutting through light brush. Hand produced at the workshops of Cuchillería Pallarès, the one surviving knife and tool maker in a town once dotted with small manufacturers. Founded in 1917  by brothers Lluís and Carles Pallarès Canal, they are now a third generation family company with a workforce of 15 whose owners and management still split their time between administrative necessity and manual craft production.
